Strawberries and Cream Eclair Cake - delicious no-bake dessert! Vanilla pudding, cool whip, strawberries, and graham crackers layered and topped with vanilla frosting. It gets better the longer it sits in the fridge - it is just SO hard to wait to eat it. SOOO good. People go nuts over this easy dessert recipe!
Spray the bottom of a 9x13 pan with cooking spray.
Line the bottom of the pan with whole graham crackers. Layer with half of the strawberry slices.
In the bowl of an electric mixer, combine pudding mix and milk; beat at medium speed for 2 minutes. Fold in whipped topping.
Pour half the pudding mixture over strawberries. Place another layer of whole graham crackers on top of the pudding layer. Top the crackers with remaining strawberry slices.
Pour the remaining half of the pudding mixture over the strawberries and cover with another layer of graham crackers.
Heat the container of prepared frosting, uncovered in the microwave for 30 to 45 seconds. Pour over the top of the cake.
Refrigerate for at least 8 hours before serving. Top with additional strawberry slices if desired.
