Baked Sweet Potato Grits with Gouda – baked grits loaded with mashed sweet potatoes and gouda cheese. Comfort food at its best! Great side dish for the holidays. Old fashioned grits, chicken broth, sweet potatoes, heavy cream, butter, gouda cheese, and eggs. Even grits haters LOVE this cheesy grits casserole! SO good! Can make in advance and refrigerate or freeze for later.
Preheat oven to 350° F. Lightly spray a 9-inch baking dish with cooking spray. Set aside.
In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 15 to 20 minutes or until thickened, stirring occasionally. Remove from heat.
Add mashed potatoes and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Add onion powder, garlic powder, salt, and pepper. Stir in 1 cup of cheese until melted.
Transfer grits to prepared dish. Sprinkle with remaining cheese.
Bake, uncovered, 30 to 35 minutes.
Notes:
I used Quaker Old Fashioned Grits. You can substitute quick-cooking grits or stone ground grits. You will just need to adjust the cooking time accordingly. I do NOT recommend instant grits.
You can use homemade mashed sweet potatoes or store-bought potatoes.
If using homemade potatoes, you make them ahead of time and refrigerate until you are ready to make the casserole.
You can substitute water for the chicken broth if you prefer.
Can Grits Casserole be made in advance? Yes! You can assemble the casserole and refrigerate it overnight before baking. You will need to add a few minutes to the cooking time if baking straight from the refrigerator.
Can Grits Casserole be frozen? Yes! You can assemble the casserole and freeze it before baking. Assemble the casserole and let it cool completely. Cover the dish with plastic wrap and foil and freeze.
To bake casserole after freezing, thaw completely, and bake as directed.
