Slow Cooker Breakfast Casserole - easy overnight breakfast recipe that tastes great. Make the casserole before going to bed and breakfast is ready when you wake up. You can't beat that! Hash browns, sausage, cheese, eggs, milk, dry mustard, onion powder, garlic powder, salt, and pepper. This is a great recipe for overnight guests, holiday mornings, hectic weekday mornings, potlucks, or even dinner. Whip up some biscuits, grits, or fruit, and enjoy!
In a 6-quart slow cooker, spread half of the frozen hashbrowns in the bottom. Top with half the sausage and half the cheese. Repeat layers.
Whisk together eggs, milk, dry mustard, garlic powder, onion powder, salt and pepper. Pour over the hashbrown mixture.
Cover and cook on low for 8 hours, or until set.
Notes:
I used Jimmy Dean sausage. You can substitute turkey sausage if you prefer.
Don't like sausage? You can substitute bacon or ham.
This is a very versatile recipe. You can add peppers, tomatoes, green onions, olives - whatever tickles your fancy. Feel free to mix up the cheeses too. The possibilities are endless!
There is no need to thaw the hash browns before adding them to the slow cooker.
