Preheat oven to 375ºF. Spray a 9x13-inch pan with cooking spray.
In a bowl, combine cooked chicken cream cheese, cottage cheese, sour cream, onion powder, garlic powder, mozzarella, and cheddar cheese.
Cut biscuits into quarters. Add biscuits to the chicken mixture.
Pour mixture into the prepared 9x13-inch pan.
Bake for 30 to 35 minutes.
Notes:
This recipe is made for the smaller can of biscuits – NOT the bigger Grands biscuits. I used two cans of Pillsbury Flaky Layers Biscuits Buttermilk. It is a 6-oz can of biscuits with 5 biscuits in each can. You will need 10 total biscuits for this recipe.
You want the cream cheese to be very soft so it gets fully incorporated into the casserole. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
Make sure to spread out the biscuits in the pan so they cook evenly. You don’t want big gobs of uncooked biscuits in the casserole.
Feel free to add vegetables to the casserole. Broccoli and spinach are good.
Can Million Dollar Chicken Bubble Up be made in advance? Yes. I prefer to mix up the chicken and cheese mixture ahead of time and toss it with the biscuits right before baking. I find that the biscuits don’t rise as well if they sit overnight.
Can Chicken Bubble Up be frozen? Yes. Bake the casserole and cool completely. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to serve, thaw and reheat covered in the oven or in the microwave.
