Preheat oven to 400ºF. Line a cookie sheet with parchment paper and set it aside.
In a non-stick skillet over medium-high heat, cook sausage until crumbled and no longer pink. Drain fat.
In a microwave-safe bowl, combine ¼ cup cheddar cheese, cream cheese, and parmesan cheese. Cook in the microwave for 30 to 45 seconds, until melted. Stir until smooth.
Stir in egg, almond flour, baking powder, and salt. Mix in cooked sausage and remaining ¾ cup shredded cheese.
Use a small cookie scoop to scoop the dough and roll it into balls. Place on prepared baking sheet.
Bake for 12 to 15 minutes, until golden brown.
Notes:
I used Bob's Red Mill Almond Flour. You can find it at Walmart, your grocery store and Amazon.
I used a roll of Jimmy Dean Hot Sausage. You can use any brand or flavor of sausage that you enjoy. You can also substitute turkey sausage for a lower calorie option.
Can Keto Sausage Balls be made in advance? Yes! Bake the balls as directed, allow them to cool, then store them in an airtight container. They will last in the fridge for 3 to 5 days.
When you are ready to serve, you can take them out and allow them to get to room temperature, heat them in the microwave or eat them cold.
Can Keto Sausage Balls be frozen? Yes! Bake the balls as directed, allow them to cool, then store them in a plastic freezer bag. Thaw and reheat in the microwave or wrapped in aluminum foil in the oven.
You can serve the sausage balls hot out of the oven or cooled to room temperature. Heck, I've even eat these cold and they taste great!
I garnish the cooked balls with some dried parsley, just for color.
