Cracked Out Breakfast Bubble Up - I am obsessed with this casserole! Only 6 ingredients: bacon, cheddar cheese, ranch dressing mix, eggs, milk, and refrigerated biscuits. SO good! Great for breakfast, lunch, dinner, baby showers, overnight guests, and holiday mornings. This only takes a minute to make and is ready to eat in about 35 minutes. We LOVE this quick and easy casserole!
Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
Using a knife, cut each biscuit into quarters (four pieces). Place biscuit pieces in the bottom of the baking dish. Top with cooked bacon and cheddar cheese.
Whisk together eggs, milk, and ranch seasoning packet. Pour over cheese and biscuits.
Bake 35-45 minutes, until golden brown. Allow to cool for 5-10 minutes before serving.
Notes:
I use two cans of the smaller 5-count (6-oz) cans of biscuits. You will have a total of 10 biscuits. I did NOT use the bigger Grands! biscuits.
Feel free to substitute turkey bacon for a lower-calorie option.
Make sure to spread the biscuits out evenly in the baking dish. You don't want big clumps of biscuits. It will take longer to cook.
Can Bubble Up Breakfast Casserole be made in advance? Yes! You can assemble the casserole and refrigerate it overnight.
If I am making this for a weekday breakfast, I will cook the bacon and whisk up the eggs the night before. I store everything in the fridge overnight. I chop the biscuits and assemble the casserole first thing in the morning and bake it. It works out great.
Can I freeze Bubble Up Breakfast Casserole? Yes! You can freeze the baked casserole and reheat it later. To reheat the casserole, thaw completely. Cover with aluminum foil and bake at 350ºF for 30 to 45 minutes.
