Place one piece of cookie dough on top of each cracker. Gently press the cookie dough over the cracker. Top with another cracker making a sandwich.
Melt the almond bark according to package directions.
Using a fork, dunk the sandwiches into the melted chocolate. Cover the crackers completely.
Shake off any excess chocolate and place the cookies onto a parchment or wax paper-lined cookie sheet.
Top the cookies with any sprinkles or toppings.
Let chocolate harden at room temperature or in the refrigerator.

I use Pillsbury cookie dough. It is safe to eat raw.
You can use any flavor of cookie dough you enjoy.
I use chocolate almond bark for this recipe. You can substitute any chocolate that you prefer. White chocolate chips, semi-sweet chocolate chips, milk chocolate chips all work great.
To melt chocolate chips, place the chocolate in a double boiler with some shortening and melt on low until the chocolate has melted.
Use 1 tablespoon of shortening for every cup of chocolate chips.
Top the dipped cookies with sprinkles, mini chocolate chips, or sea salt.
Use heart sprinkles for Valentine’s Day.
Red & green sprinkles for Christmas.
Use school/team colored candy melts or sprinkles for football tailgating or a graduation party.
Store the cookies in an airtight container in the fridge.
Can I freeze Ritz Cracker Cookies? Yes! Once the chocolate has hardened, place the cookies in a freezer bag or airtight container and freeze for a quick snack later.
Place wax paper or parchment paper between any layers to keep the cookies from sticking together.
