Taco Pot Pie - individual tacos served in a bread bowl. Taco Tuesday has never been so fun! Ground beef, taco seasoning, salsa, black beans, corn kernels, and cheese baked in ramekins and topped pizza crust. Can customize the meat filling to each family member's tastes. Top the baked pies with your favorite taco toppings - lettuce, tomatoes, avocado, and cheese. Add these to your menu ASAP! You won't regret it!
Preheat oven to 425ºF. Spray ramekins with cooking spray, making sure to spay the top outside rim. Set aside.
In a large skillet, brown the ground beef. Drain fat and return meat to skillet. Add taco seasoning, water and salsa. Simmer for 5 minutes. Stir in black beans and corn.
Divide taco meat between the ramekins. Top with a slice of cheese.
Cut the pizza dough into four rectangles. Stretch the dough across the top and let hang over the edge.
Bake for 15 minutes until the dough is golden. Invert each pot pie onto a plate and lift off the ramekin.
Notes:
Can substitute ground turkey or ground chicken for ground beef.
Feel free to add extra or different vegetables to the ground beef mixture. Onions, peppers, yellow peppers, green chiles, Rotel tomatoes, olives - anything goes! If using onions and peppers, sauté them with the ground beef until tender.
I use a can of Pillsbury refrigerated pizza dough.

You can use cheese slices or grated/shredded cheese. I use cheddar cheese, but feel free to use any cheese that you enjoy. You will need approximately one cup of cheese for this recipe.
If the edges of the pizza crust start to get too brown, cover the edge of crust with strips of foil during the final minutes of baking.
I used four large 12-ounce porcelain ramekins. Feel free to use six 8-ounce ramekins and cut the pizza dough into six rectangles.
Can Taco Pie Pie be made in advance? Yes! You can cook the ground beef mixture ahead of time and store it in the refrigerator until you are ready to assemble and bake the pies.
