Cheesy Amish Breakfast Casserole recipe – our go-to breakfast casserole. Bacon, sausage, hash browns, eggs, cheddar cheese, cottage cheese, and swiss cheese. SO creamy and delicious! Can make ahead of time and freeze or refrigerate until later. Perfect for hectic weekday mornings, overnight guests, and holiday mornings.
Preheat oven to 350ºF. Grease a 9x13-inch baking dish. Set aside.
Cook bacon and sausage in a large skillet until done. Drain fat.
Place eggs and cottage cheese in a food processor or blender. Blend until smooth.
In a large bowl, combine bacon, sausage, hash brown potatoes, egg mixture, cheddar cheese, and swiss cheese.
Pour mixture into prepared baking dish.
Bake 55 to 65 minutes.
Notes:
There is no need to thaw the shredded hash brown potatoes before adding them to the casserole.
I blend the eggs and cottage cheese together in a food processor until smooth. If you don't have a food processor, you can use a blender or mix the eggs by hand with a whisk.
Feel free to add onions, green bell peppers, or mushrooms.
Can use any meat in this casserole that you prefer. I use a combination of bacon and sausage, but feel free to use all bacon or all sausage. Diced ham is also delicious.
I use Jimmy Dean sausage.
I use a combination of cheddar cheese and swiss cheese. You can use any cheese that you enjoy. Muenster, gouda, gruyere, white cheddar all work great.
Can Amish Breakfast Casserole be made in advance? Yes! You can assemble the casserole and bake it the next morning.
Can Amish Breakfast Casserole be frozen? Yes! Assemble the casserole and cover the pan with plastic wrap and aluminum foil and place in the freezer. When ready to bake, thaw and bake as directed.
Store leftovers in an airtight container in the refrigerator.
