Margarita Grilled Chicken recipe – copycat Chili’s Margarita Grilled Chicken - the BEST chicken! Only 4 ingredients including the chicken! Chicken, margarita mix, Rotel diced tomatoes and green chiles, and taco seasoning. Great as a main dish or chopped up in tacos. We make this at least once a month. Serve over a bed of rice and black beans. Add this restaurant favorite to your menu ASAP!
1(10-oz)can Rotel diced tomatoes and green chilies,undrained
6boneless skinless chicken breast halves
Instructions:
Whisk together margarita mix, taco seasoning, and Rotel. Pour over chicken and marinate at least 2 hours.
Prepare grill and remove chicken from marinade. Grill approximately 12 to 15 minutes, until no longer pink and reaches an internal temperature of 165ºF.
Notes:
Does Margarita Grilled Chicken Have Alcohol? No! This Margarita Grilled Chicken doesn’t contain any alcohol. It uses margarita mix. The margarita mix does not contain any alcohol.
You can use frozen margarita mix or bottled margarita mix.
If you can't find margarita mix, you can substitute a can of frozen limeade concentrate.
You can use this marinade on any chicken pieces – breasts, tenders, thighs, wings, or drumsticks/legs.
You can use boneless or bone-in chicken. Cook until a meat thermometer registers an internal temperature of 165ºF.
I suggest pounding the chicken breast to an even thickness. We put the chicken in a ziplock bag and use a flat meat mallet to carefully pound out the hump. This ensures that the chicken cooks evenly and you don’t have juicy chicken and half-dry chicken.

I don’t have a grill. Can I cook the chicken breasts in the oven or skillet? Yes! To cook the chicken breasts inside, pan-sear it in a skillet or grill pan for 3 to 4 minutes per side. Place on a rimmed baking sheet or baking dish. Bake at 400ºF for 10 minutes, until it reaches an internal temperature of 165ºF.
