Old School Chicken Noodle Casserole recipe - comfort food at its best! Chicken and noodles loaded with cream cheese, parmesan cheese, sour cream, and topped with buttery Ritz cracker crumbs. YUM! Use a rotisserie chicken and this comes together in minutes! Chicken, egg noodles, cream of chicken, cream of mushroom, cream cheese, sour cream, parmesan cheese, garlic, onion, salt, and pepper. Can make in advance and refrigerate or freeze for later.
Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
Cook egg noodles according to package directions. Drain and set aside.
Remove skin from rotisserie chicken and discard. Pull meat from chicken and chop.
In a large bowl, combine cream of chicken soup, cream of mushroom soup, cream cheese, sour cream, parmesan cheese, onion powder, garlic powder, salt, and pepper
Add cooked noodles and chopped chicken. Mix until thoroughly combined.
Spread mixture into prepared pan.
In a small bowl, combine Ritz cracker crumbs and melted butter. Top the casserole with cracker crumbs.
Bake uncovered for 45 to 55 minutes, until bubbly.
Notes:
I use a rotisserie chicken in this recipe. You can use any cooked chopped chicken that you prefer. Chicken breasts, chicken thighs, or chicken tenderloins are all great.
Can substitute cooked chopped turkey.
You can use any combination of condensed cream of soup. Cream of chicken soup, cream of mushroom soup, and cream of celery soup all work great.
I suggest using Unsalted Cream of Chicken & Mushroom Soups in this dish to control the sodium.
Substitute mushroom bouillon to make cream of mushroom soup.
The cream cheese needs to be a room temperature so it can be fully incorporated into the dish. If you are short on time, microwave it for about 20 seconds in the microwave.
What veggies can I add to the casserole?

Spinach
Can use low-fat cream cheese and sour cream to reduce the calories in the dish.
I use grated parmesan cheese in this casserole. You can use freshly grated or the stuff in the green can.
Feel free to substitute your favorite cheese. Cheddar cheese would be good.
Can Chicken Noodle Casserole be made in advance? Yes! Assemble the casserole and cover with plastic wrap. Place the casserole in the refrigerator until ready to bake.
Can Old School Chicken Noodle Casserole be frozen? Yes! Assemble the casserole and cool completely. Cover the baking dish with plastic wrap and aluminum foil. Freeze until ready to bake.
