Cheesy Squash Casserole Recipe – squash tossed in a white cheddar cheese sauce and baked – this is like macaroni and cheese without noodles. Even squash haters will love this easy casserole! Squash, onion, butter, salt, pepper, flour, milk, white cheddar cheese, and breadcrumbs. Super simple to make and packs a ton of great flavor. Can make in advance and refrigerate until ready to bake.
Preheat oven to 400ºF. Lightly spray an 11×7-inch dish with cooking spray. Set aside.
In a large skillet over medium-high heat, melt 2 Tbsp butter. Add onion and cook for 5 minutes, or until tender. Add squash, 1½ tsp salt, and pepper. Cover and cook, stirring occasionally, 15 minutes, or until squash is tender. Drain well.
Melt the remaining 2 Tbsp butter in a saucepan over medium-high heat. Whisk in flour until smooth. Slowly whisk in milk. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from heat and stir in cheese and remaining ½ tsp salt.
Gently stir together the squash mixture and cheese sauce. Pour into prepared pan. Sprinkle with breadcrumbs.
Bake for 20 minutes, or until bubbly. Let stand 10 minutes before serving.
Notes:
You can substitute Ritz cracker crumbs or parmesan cheese for breadcrumbs.
I use summer squash. Feel free to substitute zucchini.
You can use any cheese that you enjoy. Sharp cheddar cheese is equally delicious.
If your skillet is not large enough, you can mix the cooked squash and cheese sauce together in a bowl.
For a gluten-free dish, substitute cornstarch for the flour and omit the breadcrumbs.
Can Squash Casserole be made in advance? Yes! Assemble the casserole and cover the baking dish with plastic wrap or aluminum foil. Refrigerate until ready to bake. You may need to add a few minutes to the baking time if baking straight out of the refrigerator.
