In a bowl, squeeze roasted garlic cloves from the bulb and mash until it forms a smooth paste.
Add feta cheese, olive oil, lemon juice, salt, and black pepper.
Stir to combine.
Transfer cheese mixture to a small baking dish.
Bake for 15 to 20 minutes, until warm. Serve with pita bread slices.
Notes:
Can use freshly roasted garlic or store-bought jarred roasted garlic or roasted garlic paste.
To make roasted garlic, preheat the oven to 400ºF. Using a sharp knife, cut 1/4" off of the top of a head of garlic to expose the cloves. Place the garlic in a piece of aluminum foil. Sprinkle with salt and pepper. Drizzle with olive oil. Wrap the bulb up in the aluminum foil and bake for 45 to 60 minutes, until the garlic is golden brown and soft.
You can use crumbled feta or a whole block of feta and crumble it yourself.
What can I add to the dip?

Fresh herbs such as oregano or parsley
chopped sundried tomatoes
chopped kalamata olives
chopped green onions
I serve the dip with toasted pita bread slices. I use Greek Pita Bread from Walmart and cut each pita into six pieces. Bake the pita squares in the oven with the dip for about 5 minutes.
Can Feta Cheese Dip be made in advance? Yes! You can mix up the dip and heat it when you are ready to serve.
You can make the roasted garlic up to two weeks in advance and store it in an airtight container in the refrigerator.
Store leftovers in an airtight container in the fridge.
