Oatmeal Pie Recipe – tastes as good as pecan pie without the expense! Oatmeal, sugar, corn syrup, butter, brown sugar, eggs, vanilla extract, oatmeal, and pie crust. If you like a warm oatmeal cookie then you are going to LOVE this old-fashioned oatmeal pie! You can make the pie several days in advance. Great for the parties and the holidays! Serve warm with a scoop of ice cream.
Whisk together sugar, corn syrup, melted butter, brown sugar, eggs and vanilla. Stir in oatmeal. Pour into regular frozen pie shell.
Bake for 45 minutes. Cool on wire rack.
Notes:
Can use quick oats or regular oats.
This recipe uses a regular frozen pie shell, not a deep dish pie shell. Make sure to grab the regular and not the deep dish pie shell when you are at the grocery store.
Can use light corn syrup or dark corn syrup.
I use Karo corn syrup.
You can use homemade crust or refrigerated pie crust. Place the unbaked pie crust in a 9-inch pie plate.
What can I add to the pie filling?

Cover the pie with aluminum foil if it starts to get too brown.
Can I freeze Oatmeal Pie? Yes! Bake the pie and cool completely. Cover the pie with plastic wrap and aluminum foil. Place in a freezer bag and freeze for up to 3 months.
Store the pie in an airtight container in the refrigerator.
