Rotel Sausage Cream Cheese Hash Brown Breakfast Casserole – All of my favorite breakfast foods in one easy casserole! Hash browns, Rotel diced tomatoes and green chiles, sausage, cream cheese, cheddar cheese, eggs, milk, garlic, onion, salt, and pepper. Can make ahead of time and refrigerate or freeze it for later. This dish is great for breakfast, lunch, brunch, potlucks, tailgating, and any upcoming holiday breakfasts! SO GOOD!
Preheat oven to 350ºF. Spray a 9x13-inch baking dish with non-stick cooking spray. Set aside.
In a large skillet, cook sausage until no longer pink. Remove sausage from the skillet and place in a bowl. Add cream cheese and Rotel. Stir until combined and set aside.
Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9x13-inch pan. Top with sausage mixture and shredded cheddar cheese.
Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture.
Bake, uncovered, for 45 to 55 minutes.
Notes:
I used Jimmy Dean sausage in this casserole. I used one package of regular and one package of hot. Feel free to use all regular or all hot sausage if you prefer.
You can substitute turkey sausage.
I use shredded sharp cheddar cheese in this recipe. Feel free to use any cheese you enjoy. Pepper jack and Monterey jack cheese are both delicious.

If using a glass pan, bring the pan to room temperature before baking.

I usually freeze this recipe unbaked.
To bake after freezing, thaw completely and bake as directed. Write the directions on the foil for easy reference.
To reheat the casserole after freezing, thaw and reheat in the microwave or covered with aluminum foil in the oven at 350ºF until warm.
