In a small bowl mix together sugar and cinnamon. Set aside.
In a mixing bowl, stir together cake mix, oil, eggs, and cream of tarter.
Using a small cookie scoop, form dough into 1-inch balls.
Roll balls into cinnamon sugar mixture. Place balls on prepared cookie sheets.
Bake for 9 to 11 minutes. Cool on the pan for 2 minutes. Remove from pan and cool on wire rack.
Notes:
You can use any flavor of cake mix. I usually use yellow cake mix or white cake mix.
Try these with a box of spice cake mix and pumpkin pie spice.
Can substitute melted butter for vegetable oil.
I use a small cookie scoop. Feel free to make larger cookies. You may have to increase the baking time by a minute or two.
Can I freeze cookies? Yes! Bake the cookies and cool completely. Transfer cookies to a freezer bag and freeze for up to 3 months.
Store leftover cookies in an airtight container at room temperature.
