Crack Keto Bites Recipe - this EASY keto bacon recipe makes an irresistible low-carb appetizer, breakfast, or snack. Only 7 ingredients and a 15 minute bake time! Crispy bacon, almond flour, egg, cream cheese, cheddar cheese, ranch seasoning, and baking powder. I could have eaten the whole batch myself! You might want to double the recipe. These low-carb puffs never last long at our house.
Preheat oven to 400ºF. Line a cookie sheet with parchment paper and set it aside.
In a non-stick skillet over medium-high heat, cook bacon until crispy. Drain on paper towels. Chop into small pieces.
In a microwave-safe bowl, combine ¼ cup cheddar cheese and cream cheese. Cook in the microwave for 30 to 45 seconds, until melted. Stir until smooth.
Stir in egg, almond flour, baking powder, and ranch dressing mix. Mix in cooked bacon pieces and the remaining ¾ cup shredded cheese.
Use a small cookie scoop to scoop the dough and roll it into balls. Place on prepared baking sheet.
Bake for 10 to 12 minutes, until golden brown.

I used Bob's Red Mill Almond Flour. You can find it at Walmart, your grocery store, and Amazon.
You can also substitute turkey bacon for a lower-calorie option.
Can use regular or uncured bacon.
To cut down on prep time, use precooked bacon.
I like to line my baking sheets with parchment paper or use a silicone baking mat. This is optional.
