Guinness Cupcakes with Baileys Buttercream recipe - wonderfully delicious chocolate cupcakes made with Guinness beer and topped with a decadent Baileys Irish Cream frosting. One bite and you will be blown away! Chocolate cake mix, sour cream, chocolate pudding mix, eggs, oil, Guinness beer, butter, powdered sugar, heavy cream, and Baileys liqueur. A must for your St Patrick's Day parties!
In a very large bowl, mix together all ingredients. The batter will be thick. Pour batter into cake pan of choice.
For cooking time, use the cooking times on the back of the devil’s food cake box as a guide. Do the toothpick check after the suggested cooking time; if it’s not done check on it every 5 mins after that.
Cool and frost with buttercream (recipe below).
Bailey's Buttercream Frosting
In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes.
With the mixer on low speed, add powdered sugar, whipping cream, and Irish cream liqueur; mix until light and fluffy.
If necessary, gradually add more powdered sugar to reach desired consistency.
