Melted Ice Cream Strawberry Cake - loaded with tons of great strawberry flavor. Only three ingredients in the cake - strawberry cake mix, eggs, and melted strawberry ice cream. Top the cake with a simple powdered sugar and meringue powder frosting. Not too heavy or overly sweet – perfect! Great for a crowd or a homemade gift.
Preheat oven to 350ºF. Spray a Bundt pan with cooking spray with flour. Set aside.
In a large bowl, mix together cake mix, melted ice cream, and eggs with an electric mixer for 2 minutes.
Pour batter into a greased and floured 12-cup Bundt pan.
Bake for 30 to 35 minutes, until a toothpick inserted into the middle of the cake comes out clean.
Cool in the pan for 10 minutes. Invert the cake onto a wire rack and cool completely.
Frosting
In a bowl, beat all ingredients with an electric mixer until light and fluffy.
Spoon frosting over cooled cake and serve.
Notes:
I suggest using premium ice cream such as Tillamook, Haagen Dazs, or Blue Bell.
Melt the ice cream and then measure two cups.
This cake must be baked in a well-greased Bundt pan. I use Pam Baking Spray or Bakers Joy Baking Spray.
The frosting uses a teaspoon of meringue powder. You can find meringue powder in the cake decorating section at Walmart, Kroger, Michaels, or Hobby Lobby.
Can top the cake with powdered sugar or buttercream frosting.
Can Strawberry Cake be made in advance? Yes! You can make the cake ahead of time and store it in an airtight container for 3 to 4 days. The cake will keep in the refrigerator for up to a week.
Can Strawberry Cake be frozen? Yes! You can freeze the baked cake. Wrap the cooled cake in plastic wrap and aluminum foil. The cake will keep for up to 6 months in the freezer.
