Rotel Sausage Cream Cheese Breakfast Casserole - super easy to make and tastes great! Crescent rolls topped with sausage, cream cheese, Rotel, eggs, milk, onion, garlic, and cheddar cheese. Ready in 30 minutes. A great dish for a potluck, overnight guests, and Christmas morning. Equally delicious at lunch and dinner!
Preheat oven to 350ºF. Lightly spray a 9x13x2 pan with cooking spray.
Cook sausage in a skillet over medium-high heat until no longer pink; drain excess grease. Remove from heat and add cream cheese. Stir to combine.
Unroll crescent rolls and press into the bottom and up the sides of the 9x13 pan, pressing seams together to seal.
Sprinkle sausage mixture, Rotel, and shredded cheese over the crust.
Whisk eggs, milk, onion powder, garlic powder, salt, and pepper until well blended. Pour over sausage.
Bake 40 to 50 minutes or until the center is set.
Notes:
I use Jimmy Dean sausage.
Can substitute turkey sausage.
I use a can of crescent dough sheets. If using crescent rolls, do not separate the dough into rolls. Lay the whole sheet into the casserole dish and press the seams together to seal.
You can use any heat level of Rotel that you prefer. Mild, Original, or Hot all work fine.
I use shredded cheddar cheese. Feel free to substitute your favorite cheese.

Can substitute heavy cream.
Can I make Sausage Breakfast Casserole ahead of time? Yes! Assemble the casserole and cover the casserole dish with plastic wrap. Store in the fridge overnight.
Can I freeze Breakfast Casserole? Yes! Bake the casserole and cool completely. Cover the pan with plastic wrap and aluminum foil. Place in the freezer and freeze for up to 3 months.
When ready to bake, thaw and reheat covered in the oven or in the microwave.
Store leftovers in an airtight container in the refrigerator.
