Cheesy Rotel Asparagus - easy baked asparagus recipe loaded with tons of Mexican flavors. Low-carb, keto-friendly, and gluten-free. Super simple to make with very little prep time and is ready to eat in under 30 minutes. Asparagus, mayonnaise, cheddar cheese, taco seasoning, and Rotel diced tomatoes and green chiles. A great way to get your family to eat their veggies. Add this to your menu ASAP!
1(10-oz)can Rotel diced tomatoes and green chilies,drained
Instructions:
Preheat oven to 350ºF.
Place asparagus in a lightly greased 9x13x2-inch baking dish.
In a small bowl mix together mayonnaise and taco seasoning.
Spread mayonnaise over asparagus. Sprinkle cheddar cheese and Rotel diced tomatoes and green chiles over the mayonnaise mixture.
Bake, uncovered, for 20 to 25 minutes.
Notes:
Make sure to trim the woody ends of the asparagus spears. The thick bottom part of the spear is white or light purple in color. It is tough and not meant to be eaten. Use a knife to quickly cut the tough ends off before adding the spears to the baking dish.
When possible, choose a bunch of asparagus where the stalks are about the same diameter.
Depending on the size of the asparagus, you will need one or two bundles.
I baked this asparagus in a baking dish, but you can also make it on a rimmed baking sheet.
I prefer to use Hellmann’s Mayonnaise.

Is Cheesy Rotel Asparagus spicy? There will be a little kick from the Rotel. Use mild Rotel if you are worried about the heat.
For best results, grate the cheddar cheese by hand straight from the block. Pre-grated cheese contains preservatives that prevent it from melting properly.
