Place chicken on a rimmed baking sheet or in a 9x13-inch baking dish.
In a medium bowl, mix together mayonnaise, garlic salt, parmesan cheese, cheddar cheese, and pimentos. Spread the mayonnaise mixture evenly on top of the chicken.
Bake for 20 to 25 minutes, until juices run clear.
Notes:
I used boneless skinless chicken breasts. You can use any chicken pieces that you enjoy. Boneless chicken tenderloins or chicken thighs will both work great.
The cooking time may vary depending on the size and thickness of your chicken breasts.
Use a meat thermometer to check for an internal temperature of 165ºF.
Make sure to use a high-quality mayonnaise in this dish. I recommend Hellmann’s Mayonnaise.
Can substitute a container of store-bought pimento cheese instead of making it from scratch.
My favorite brands are Palmetto, Calllie's Hot Little Biscuit, and Price's.
I like to cook the chicken under the oven broiler for a minute or two to get the cheese extra melty.

I prefer to use freshly grated cheese in this dish. I find that it melts better than the cheese from a bag.
