Crack Coleslaw - loaded with cheddar bacon and ranch. This stuff is seriously THE BEST! Coleslaw mix, mayonnaise, ranch dressing mix, bacon, cheddar cheese, dijon mustard, vinegar, heavy cream, and green onions. Makes a ton. Great for a potluck. Can easily half the recipe. We LOVE this easy and delicious side dish recipe!
In a large skillet, cook bacon over medium heat until crispy. Drain excess grease on paper towels. Set aside.
In a large bowl, whisk together mayo, dijon mustard, white vinegar, ranch dressing mix, and heavy cream. Add shredded cabbage, cheddar cheese, and cooked bacon to the bowl. Toss the cabbage mixture with tongs to combine. Top the slaw with chopped green onions.
Cover the bowl and refrigerate until ready to serve. Stir slaw before serving. Garnish with extra cheese and bacon before serving, if desired.
Notes:
To cut down on prep time, use precooked bacon.
Can substitute turkey bacon.
Can substitute milk or buttermilk for heavy whipping cream.
