Smothered Carrots –the only way to eat carrots! Sliced carrots baked in bacon, brown sugar, butter, soy sauce, and garlic. Everybody gets seconds. SO good!! Great for a potluck. Everyone asks for the recipe! Super easy to make.
Pour sliced fresh carrots in an ungreased 9×13-inch pan.
In a large skillet, cook bacon until almost done but not too crispy. Remove from skillet, drain on paper towel and chop. Sprinkle cooked bacon on top of carrot chips.
Whisk together brown sugar, melted butter, soy sauce, and garlic powder. Pour over carrot chips.
Bake uncovered for 40 minutes.
Notes:
Can substitute turkey bacon.
I suggest using low-sodium soy sauce.
The cooking time will vary depending on how thick you cut your carrot slices.
Thicker slices will take longer to get tender.
If using pre-sliced carrots or baby carrots you will need to increase the cooking. Pre-sliced carrots and baby carrots are dryer and harder than regular carrots.
I sliced my carrots with a crinkle cut knife.
Can add a splash of real maple syrup for some extra flavor.
Can I make Bacon Smothered Carrots in the slow cooker? Yes, place all of the ingredients into a crockpot. Cook on low or high until the carrots are tender. Perfect for the hectic holiday season when you are low on oven space or busy weeknights!
