1(24-oz)container cottage cheese
1½cupsshredded Monterey Jack cheese
1½cupsshredded cheddar cheese
3(4-oz)cans chopped green chiles, drained
Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
Cook bacon until crisp. Drain fat and finely chop.
Whisk together eggs, cottage cheese, flour, baking powder, and salt. Stir in cheeses, green chiles, and cooked bacon. Pour into prepared baking dish.
Bake uncovered for 45 to 55 minutes, until the middle is puffed and the edges are golden brown.
Let the casserole stand 5 to 10 minutes cutting into pieces and serving.
Can substitute 1 cup chopped precooked bacon for fresh bacon.Can substitute turkey bacon for pork bacon.
