Tangy Honey Mustard Bacon Cheddar Chicken - chicken marinated in homemade honey mustard, pan-seared and topped with bacon and cheddar. I could eat this every week! Can also grill chicken if desired. Chicken, honey, dijon mustard, lemon juice, paprika, cayenne pepper, bacon, and cheddar. Ready in under 30 minutes. This is the BEST!
Mix together honey, dijon mustard, lemon juice, paprika, salt and cayenne pepper.
Place chicken in a ziplock bag. Pour marinade over chicken and place in the refrigerator for 1-3 hours, up to overnight.
Preheat oven to 400ºF.
Heat olive oil in skillet over medium high heat. Add chicken. Cook 3 minutes per side. Place chicken on large baking sheet. Cook in oven for 10 minutes.
Remove chicken from oven. Top with cooked bacon and cheddar. Return to oven and cook an additional 3-5 minutes, until cheese is melted.
Notes:
I used boneless skinless chicken breasts in this recipe. Feel free to use your favorite cut of chicken instead. This would be great with chicken thighs or tenders too. Just make sure to adjust the cooking time and check for an internal temperature of 165ºF.
I cooked the chicken on the stove and finished it off in the oven. Feel free to grill the chicken if you prefer.
You can substitute turkey bacon for pork bacon if you want to reduce the calories in the dish.
Feel free to use your favorite cheese in place of the cheddar. I like pepper jack or gouda.
