Black Eyed Pea Salad Recipe - red bell pepper, green pepper, scallions, garlic, olive oil, vinegar, parsley and black eye peas - GREAT side dish! We also like it as a dip. Make ahead of time and refrigerate - will last for several days. Recipe adapted from the famous Hattie B's Hot Chicken restaurant in Nashville, TN
1red bell pepper,finely chopped
1green bell pepper,finely chopped
¼cupapple cider vinegar
1½tspfreshly ground black pepper
3(15-oz)cans black eyed peas, drained and rinsed
Whisk red and green peppers, scallions, garlic, oil, Champagne vinegar, cider vinegar, parsley, salt, and black pepper in a medium bowl. Toss with black eye peas. Chill.
Can serve this as a side dish or dip with chips and crackers.
