In the bowl of a stand mixer, beat together butter, sugar and brown sugar on medium speed for about 2 minutes.
Add eggs, vanilla, and lemon juice, blending with mixer on medium speed for about 2 minutes, or until light and fluffy. Scrape down the bowl as necessary.
Add flour, oats, baking soda, salt and cinnamon to mixer on low speed. Mix just until blended.
Stir in chocolate chips and walnuts.
Divide dough into 26 balls and refrigerate for at least 1 hour.
Place chilled cookie dough on a parchment-lined baking sheet 2-inches apart.
Preheat oven to 300°F. Bake for 20 to 23 minutes, or until edges are golden brown and center is still soft.
Remove from oven and cool on baking sheet for about 15 minutes before transferring to a cooling rack.
Notes:
You can freeze the unbaked cookies, and there’s no need to thaw before baking. You may need to add a few minutes to the cooking time.
