Notes:
Trim tough silver skin from pork tenderloin before marinating. It is OK to eat pork that is pink. Pork is safe to eat at 145ºF.Use a meat thermometer to check the internal temperature: 145-150ºF - Medium Rare 150-155ºF - Medium 155-160ºF - Medium Well 160ºF plus - Well DoneTo cook pork without a grill, in a skillet or grill pan, sear pork tenderloin for 2 minutes on all sides. Transfer the skillet to the oven and cook at 400ºF for 10 to 12 minutes, until an instant-read thermometer stuck in the thickest part of the meat reads 145°F. Remove from oven and let rest for 5 minutes before slicing. My favorite BBQ sauces are G. Hughes, Sweet Baby Rays, Stubbs, and Williamson Brothers.
