1(10-oz)can diced tomatoes and green chiles, undrained
1(8-oz)can tomato sauce
1½cupsshredded cheddar cheese
Preheat oven to 350ºF. Spray a 9x9-inch baking dish with cooking spray.
Brown meat; drain off fat and return to skillet. Add taco seasoning, diced tomatoes and green chiles, and tomato sauce. Stir and simmer for 5 minutes.
Mix together cottage cheese, sour cream, and rice.
Spread rice mixture in bottom of the prepared pan. Top with taco meat sauce. Sprinkle cheese on top of casserole.
Bake uncovered for 20 to 25 minutes.
Can substitute ground turkey for beef.Can use low-fat sour cream or plain Greek yogurt in place of sour cream.Can use white or brown rice.Can make in advance and refrigerate or freeze for later.If baking after freezing, thaw completely and bake as directed above.Use gluten-free taco seasoning to make the dish gluten-free.Use mild diced tomatoes and green chiles if concerned about the heat.
