Southwestern Squash Casserole - CRAZY good!!! Great side dish for all your Tex-Mex dishes!! Squash, cheddar cheese, onion, green chiles, jalapeños, cumin, salsa, green onions, red onion. Everyone loved this easy side dish recipe. Great for a potluck and cookout.
Preheat oven to 400ºF. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
In a large bowl, combine squash, 1 cup cheese, onion, green chiles and jalapeños. Sprinkle with flour, cumin and salt. Toss to combine.
Transfer squash mixture to prepared pan.
Bake, covered, for 30 to 40 minutes. Remove from oven and top with salsa and remaining 1½ cups cheese.
Bake uncovered for an additional 10 to 15 minutes. Top with green and red onions before serving.
Notes:
I used yellow squash in this dish. This would also be great with half squash, half zucchini.You can assemble the casserole ahead of time and refrigerate until ready to bake.Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa.Can use homemade salsa. This is also delicious with a Mexican cheese blend or pepper jack cheese.This casserole does have a little kick from the jalapeños, and salsa. You can substitute green chiles for the jalapeños and mild salsa if you are worried about the heat.
