I used yellow squash in this dish. This would also be great with half squash, half zucchini. You can assemble the casserole ahead of time and refrigerate until ready to bake. Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa. Can use homemade salsa. Here is our favorite recipe: https://www.plainchicken.com/superior-grill-salsa/I used cheddar cheese. This is also delicious with a Mexican cheese blend or pepper jack cheese. This casserole does have a little kick from the jalapeños, and salsa. You can substitute green chiles for the jalapeños and mild salsa if you are worried about the heat.
