Place uncooked boneless chicken breasts in slow cooker. Top with beans, tomatoes, corn, Ranch mix, taco seasoning and chicken broth. Cook on low for 8-9 hours. Serve with Fritos, cheese and a dollop of sour cream.
Stove Top
In a Dutch Oven, combine cooked chicken beans, tomatoes, corn, Ranch mix, taco seasoning and chicken broth. Bring to a boil. Reduce heat and simmer for 20 to 30 minutes. Serve with Fritos, cheese and a dollop of sour cream.
Notes:
I used chicken breasts in the slow cooker version. Feel free to use your favorite cut of chicken - breasts, tenders, or thighs.
We did not think the soup was spicy. Use a can of MILD Rotel for a less spicy dish.

I used pinto beans and black beans. You can use any beans that you prefer.
You can freeze leftovers for a quick meal later. Cool the soup and place in plastic containers or freezer bags. To reheat, thaw and reheat on the stovetop or in the microwave.
To make a freezer meal out of this recipe, place all the ingredients in a gallon freezer bag. When ready to make the soup, place the contents of the bag in the slow cooker and cook all day on LOW. There is no need to thaw the bag before adding it to the crockpot.
