Pulled Pork Vegetable Soup - hands down the BEST vegetable soup EVER!!! Ready to eat in about 30 minutes. Just dump everything in the pot, bring to a boil and simmer. SO easy! Smoked pulled pork, creamed corn, diced tomatoes and green chiles, stewed tomatoes, mixed vegetables, onion, garlic, chili powder, chicken broth and brown rice. Add all ingredients except brown rice to Dutch Oven. Bring to a boil.
Reduce heat, cover and simmer for 15 minutes. Add instant brown rice. Cover and continue cooking for 10 minutes.
Notes:
For the pulled pork, I used some smoked pulled pork from Costco. It is crazy delicious.
If you don't have access to Costco, just look for pre-cooked pulled pork at the grocery store. It is where the other prepared meats are. At my store, it is near the diced ham and pre-made potatoes near the produce section.
Look for pulled pork that doesn't have BBQ sauce on it. Walmart sells their Great Value brand of uncured pulled pork without sauce.
You can also pick up a pound of smoked pork from your favorite BBQ joint.
I used instant brown rice. Feel free to substitute instant white rice.
If you want to use regular white or brown rice, you will need to increase the cooking time to get the rice cooked. I would simmer the soup with the regular rice the time the package suggests for cooking. You may need to add more broth if using regular rice.
Can Pulled Pork Vegetable Soup be made in the crockpot? Yes! Add all the ingredients to the slow cooker and cook for 6 to 8 hours on LOW. Add rice and cook for an additional 10 minutes.
To make this a freezer meal - place all ingredients, except rice, in a gallon ziplock bag. Place in the freezer. When ready to cook, place the contents of the freezer bag into the slow cooker and cook for 6 to 8 hours on LOW. Add rice and cook for an additional 10 minutes.
Can freeze leftovers in ziplock bags for later. To reheat, thaw, and reheat in the microwave, on the stovetop or in the slow cooker.
