Ingredients:
1(11 to 15-oz) can corn, drained
1(10-oz)can diced tomatoes and green chiles, drained
1cupItalian dressing
2cupsfinely shredded Mexican cheese blend
Instructions:
Combine all ingredients in a bowl.
Cover and refrigerate until ready to serve.
Serve with tortilla chips or Fritos. Stir before serving.
Notes:
Feel free to customize this to your own tastes. I think this would also be good with some black beans, black olives, fresh chopped onion and green pepper mixed in.
I used a can of white shoepeg corn. You can use a can of regular yellow corn if you prefer.
Can use any cheese you prefer in this dip. Sometimes I kick it up with some pepper jack cheese.
I used a can of regular Rotel diced tomatoes and green chiles. If you are worried about the heat in this dish, make sure to use a can of mild Rotel diced tomatoes. If you like it spicier, grab a can of HOT Rotel tomatoes.
Can Cheesy Corn Salsa be made in advance? Yes! I always make this the day before we want to serve it and let it marinate overnight in the refrigerator. This is one of those dips that gets better the longer it sits.
Serve the dip with your favorite chips; we prefer tortilla chips or Fritos Scoops.
