Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
Whisk together eggs, milk, chives, salt, and pepper. Stir in corn and 1-1/2 cups cheese. Transfer to prepared baking dish.
Combine crushed crackers and melted butter. Sprinkle over casserole. Top casserole with remaining 1/2 cup of swiss cheese.
Bake uncovered for 35 to 45 minutes. Let stand 10 minutes before serving.
Notes:
I used frozen Silver Queen corn kernels. It is my favorite type of corn. If you can't find Silver Queen corn, any frozen corn will work just fine. I used swiss cheese in this casserole, but feel free to use any cheese you like.
Can Corn Casserole Be Made in Advance and Frozen? Yes! This casserole can be made in advance and refrigerated or frozen for later.
To bake after refrigerating overnight you will need to add a few minutes to the cooking time since the casserole will be cold.
You can freeze this casserole baked or unbaked. To bake after freezing unbaked, thaw completely, and bake as directed below.
To reheat after freezing baked casserole, thaw completely and reheat in the microwave or covered in the freezer.
