Chicken Pot Pie Rollups - heaven in a pan! SOOO good! EVERYONE loved this casserole. Chicken, cream cheese, cheddar cheese, crescent rolls, cream of chicken soup, milk and frozen mixed vegetables. Ready in 30 minutes!! Great weeknight casserole recipe.
Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
Combine chicken, cream cheese, and 1 cup cheddar cheese. Separate crescent rolls into 8 triangles. Top the large part of the crescent triangle with the chicken mixture. Roll crescent rolls up.
Place crescent rolls in prepared pan.
Mix together milk, soup, 1/2 cup cheese and mixed vegetables. Pour over crescent rolls.
Bake for 30 minutes or until bubbly.
Notes:
I used rotisserie chicken for the cooked chicken in this casserole. Any cooked chicken will work just fine.
Do they crescent rolls get soggy? The rolls are not crispy like they would be if you baked them straight from the can. They are soft. If you want crisper rolls, bake the rolls without the sauce until golden brown and then add the sauce and cook an additional 10 to 15 minutes, until the sauce and vegetables are warm.
Can I freeze Chicken Roll Ups? Yes! Cool the baked casserole and cover with plastic wrap and aluminum foil and freeze.
