Cook spaghetti according to package directions. Drain.
While spaghetti cooks, prepare the sauce.
In a large skillet over medium-high heat, cook sausage until no longer pink. Drain fat.
Add butter and garlic to the skillet and sauté for 1 minute. Add the Rotel tomatoes, cream cheese, sour cream, heavy cream, onion powder, salt, and pepper. Reduce heat to low. Cook and stir just until smooth (do not boil). Remove from the heat and stir in parmesan cheese.
Add cooked pasta to the sauce and toss to coat. Sprinkle with parsley.
Notes:
I used Jimmy Dean Hot Sausage. You can use any brand or type of fresh pork sausage you prefer.
Don't like spaghetti? You can use any pasta you prefer. Penne, bowtie, fettuccine, or linguine all work great.
Is Sausage & Rotel Pasta spicy? This pasta does have a kick to it. If you are sensitive to heat, use a can of Mild Rotel Diced Tomatoes & Green Chiles.
This pasta is best served immediately after preparing.
You may need to add more heavy cream, milk, or chicken broth to the pasta when reheating any leftovers.
