With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips. Do not separate strips.
Bake for 10 minutes.
Remove breadsticks from oven and spread pesto on top of partially baked breadsticks. Top with smoked gouda and mozzarella cheese.
Bake an additional 5 minutes, until bread is golden and cheese is melted.
Notes:
I used a can of regular Pillsbury pizza dough and cut it into 16 strips. I left the strips intact while baking.
Feel free to swap the cheeses out for your favorites. Pepper Jack, Monterey Jack, cheddar, Dubliner, provolone would all be delicious. I just love the combination of smoky gouda and mozzarella.
