Preheat oven to 350ºF. Spray a 12-inch skillet or 9x13-inch pan with cooking spray.
In a skillet over medium-high heat, cook sausage until no longer pink. Drain fat.
Combine cooked sausage with remaining ingredients. Spread dip into prepared dish/skillet.
Bake for 30 minutes, until bubbly.
Notes:
I used a roll of Hot Jimmy Dean sausage. You can substitute regular sausage or even turkey sausage if you prefer.
I used a can of regular Rotel diced tomatoes and green chiles. If you are worried about the heat, make sure to use a can of mild Rotel or a can of plain diced tomatoes.
You can make this dip a day or two in advance and refrigerate until ready to bake.
