Spinach Salad with Basil Green Goddess Dressing – our favorite salad! Spinach, tomatoes, mushrooms, hard-boiled eggs, red onion, croutons, and homemade Basil Green Goddess Dressing. The dressing really puts this salad over the top! Mayonnaise, buttermilk, fresh basil, green onion, lemon, Worcestershire sauce, salt, and pepper. For the dressing, purée basil, mayonnaise, buttermilk, scallion, lemon juice, and Worcestershire sauce in a mini food processor or blender; season with salt and pepper.
In a large salad bowl, add spinach, eggs, tomatoes,mushrooms, red onion, and croutons.
Pour the desired amount of dressing over salad before serving and toss gently. Serve immediately.
Notes:
You can make the salad with any of your favorite salad toppings. Avocado, radishes, bell peppers - whatever you want!
You can make the creamy basil dressing ahead of time and refrigerate it until you are ready to toss the salad. I usually make the dressing a day or two in advance of serving.
The dressing will keep up to two weeks in the refrigerator.
You can assemble the salad mixture in advance and refrigerate until ready to serve. Toss it with the dressing just before serving so the spinach isn’t soggy.
If you aren’t making this for a crowd, just make as much salad as you want and toss it with a little dressing. YUM!
