Italian Pasta Salad - seriously THE BEST! I could make a meal out of this pasta salad!!! Penne pasta, olive oil, lemon juice, mayonnaise, Italian seasoning, grape tomatoes, shaved parmesan, and basil. Makes a ton. Great for a potluck. Can easily half the recipe. Easy and delicious side dish recipe!
1(16-oz)box penne pasta
¾cupgrape tomatoes, cut into halves
1½cupsshaved parmesan cheese
¼cupchopped fresh basil
Cook pasta according to package directions. Drain and cool.
Whisk together oil, juice, mayonnaise, and Italian seasoning in a large bowl. Add cooked pasta, tomatoes, parmesan cheese, and basil. Toss to coat.
Cover and refrigerate 8 hours before serving.
You can use any shape of pasta that you prefer.
I used a container of freshly shaved parmesan in this recipe.
Can Italian Pasta Salad be made in advance? Yes! I prefer to make this the day before serving to give the flavors time to develop. The pasta salad will keep about 5 days in the refrigerator.
Add cooked chicken to the pasta salad to turn this into a main dish.
