Bacon & Pimento CheeseQuiche - so delicious! Can make ahead and refrigerate or freeze for later. Pimento cheese, bacon, sour cream, eggs, milk, and pie crust. Everyone LOVED this delicious quiche!! I always double the recipe because this doesn't last long. SO good!
Put pimento cheese and bacon in the bottom of the pie crust.
Whisk together eggs, sour cream, and heavy cream. Pour over bacon mixture.
Bake for 60 minutes, until set.
Notes:
You can use a frozen or homemade pie crust. Either is just fine.
I used Palmetto Pimento Cheese for the pimento cheese in this dish.
To cut down on the prep time, I used pre-cooked bacon. Feel free to add some mushrooms and onions to the filling. I also add green onions sometimes.
Can Homemade Quiche be made in advance? Yes! You can assemble the quiche ahead of time and refrigerate it overnight.
Can Homemade Quiche be frozen? Yes! You can make this quiche ahead of time and freeze it baked or unbaked for later.
I prefer to freeze the quiche unbaked. Assemble the quiche and place in the freezer. Once the quiche is frozen place it in a freezer bag. When ready to bake, thaw the quiche in the refrigerator before baking as directed below.
To freeze the baked quiche, cool the quiche completely and wrap the pie plate with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.
How long will Homemade Quiche last? The quiche will keep 3 to 4 days covered in the refrigerator.
