Chicken & Waffles Casserole - sweet and savory in every bite! Our go-to breakfast casserole! Only 5 ingredients: waffles, frozen popcorn chicken, eggs, milk, and maple syrup. Can make the night before and refrigerate until ready to bake. Great for overnight guests and hectic holiday mornings. Equally delicious for brunch, lunch, and dinner. Make this ASAP!
Preheat oven to 350ºF. Grease a 9x13-inch baking dish.
Slightly thaw the popcorn chicken and chop into bite-sized pieces.
Toast waflles according to package directions and cut into cubes.
Add half of the cubed waffles in a single layer. Top with half of the chicken pieces. Layer the remaining waffles and chicken.
Whisk together the eggs, milk, maple syrup, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole.
Bake for 50 to 60 minutes.

I use Tyson popcorn chicken. Just Bare Chicken nuggets from Costco are also great.
I use REAL maple syrup, NOT pancake syrup.
Can Chicken & Waffles Casserole be made in advance? Yes! You can assemble the casserole and refrigerate it for a few hours to overnight.
Can Chicken & Waffles Casserole be frozen? Yes! Assemble the casserole. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.
To freeze the baked casserole, bake as directed and cool completely. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and reheat covered in the oven or in the microwave until warm.
I like to brush the baked casserole with extra maple syrup. This is totally optional but totally delicious!
