Pretzel Chicken Minis - transform refrigerated crescent rolls into a delicious snack! Super easy to eat and even easier to eat! These things fly off the plate at parties. You can't eat just one! Frozen popcorn chicken, honey mustard, and crescent rolls boiled in water and baking soda then baked. Great for parties, tailgating, and even a quick lunch or dinner. Dip the pretzel bites in some honey mustard, Raising Cane's sauce or beer cheese dip. YUM!
In a large pot, combine 10 cups water and baking soda. Bring to a boil.
Unroll both cans of the dough; separate into 16 triangles. Spread a heaping teaspoon of honey mustard on each triangle. Cut each triangle lengthwise into 3 narrow triangles.
Place popcorn chicken on the wide side of each triangle. Roll up.
Using tongs or a strainer, dip each wrapped chicken into boiling water for 15-20 seconds. Place dipped rolls on a parchment-lined baking sheet.
Whisk together egg and 1 Tbsp water. Brush on dipped crescent rolls. Sprinkle tops with pretzel salt.
Bake for 15-18 minutes.

I used Boise Salt Co. Pretzel Salt on top of the pretzels. I bought it at Amazon: https://amzn.to/3mNcnjj The salt really makes the pretzel bites. It gives them the authentic flavor you are looking for. If you can't find pretzel salt, you can substitute coarse sea salt.
I used a spider strainer to dip the crescent rolls into the baking soda mixture.
Why do you put pretzels in baking soda? Dipping the crescent rolls into the baking soda mixture is what gives the dough the brown texture. The baking soda creates a chemical reaction giving the dough that signature chewy crust.
You do not have to fully thaw or precook the frozen popcorn chicken. It will cook in the boiling water and oven with the crescent rolls.
