Cheesy Baked Asparagus - an easy and delicious side dish that is low-carb, keto-friendly, and gluten-free. Super simple to make with no prep time and ready to eat in under 30 minutes. Asparagus, garlic cloves, black pepper, mozzarella cheese, parmesan cheese, heavy cream, and red pepper flakes. Serve this with your favorite steak for a meal that is better than any restaurant. Add this to your menu ASAP!
Preheat oven to 400ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
Place trimmed asparagus spears in the baking dish. Sprinkle with salt, pepper, and minced garlic. Pour heavy cream over asparagus.
Top the asparagus with parmesan and mozzarella cheese. Sprinkle with red pepper flakes.
Bake for 20 to 25 minutes.
Turn on the broiler and broil until the cheese is golden brown.
Notes:
Make sure to trim the woody ends of the asparagus spears. The thick bottom part of the spear is white or light purple in color. It is tough and not meant to be eaten. Use a knife to quickly cut the tough ends off before adding the spears to the baking dish.
I used fresh minced garlic cloves. Feel free to use jarred minced garlic or even garlic powder.
This is also delicious with some cooked chopped bacon. Just sprinkle it over the asparagus before baking.
Can Baked Asparagus be made in advance? Yes! You can assemble the recipe ahead of time and refrigerate it overnight before baking.
You can use freshly grated parmesan cheese or the cheese in the green can. Either will work just fine.
You can use any cheese that you enjoy in this recipe. Swiss, gruyere, or gouda would all be delicious!
I like to place the casserole dish under the broiler in the oven and broil until the cheese starts to get a little golden.
