Slow Cooker Buffalo Chicken Chili - this stuff is AMAZING! We've made it 3 times this month! We can't get enough of it! Chicken, chili beans, black beans, chicken broth, Rotel diced tomatoes and green chiles, cumin, chili powder, ranch seasoning, cream cheese, buffalo wing sauce. We served the chili with some cornbread and Fritos. If you like buffalo wings, you are going to LOVE this easy chili recipe!
Add chili beans, black beans, Rotel diced tomatoes and green chilies, chicken broth, cumin, chili powder, ranch seasoning, and buffalo sauce. Stir together. Place cream cheese on top of the chicken.
Cover with lid and cook on LOW for 6-8 hours.
Remove chicken from slow cooker and shred with 2 forks. Return to slow cooker and stir.
Notes:
I use chicken breasts in the chili. You can substitute boneless chicken tenderloins or chicken thighs if you prefer.
I use Frank's Hot Sauce or Frank's Buffalo Sauce in this recipe.
Feel free to substitute your favorite beans in the chili. White beans, kidney beans, or great northern beans work great.
For a low-carb soup, omit the beans.
Feel free to add more veggies to the chili. Chopped peppers, onion, carrots, and celery are all great.
You can use frozen chicken in this recipe.
If you have clumps of cream cheese in the finished soup, use a whisk to help get it fully incorporated into the soup.
Can I cook the chili on HIGH? Yes! You can cook the chili on HIGH for 3 to 4 hours.
Can I make Buffalo Chicken Chili on the stovetop? Yes! Add all the ingredients to a Dutch oven or large pot and cook on medium heat until the chicken is done.
If you want to cut down on the cooking time, use some chopped rotisserie chicken instead of the raw chicken breasts. Dump all the ingredients in a Dutch oven, bring to a boil and simmer for 20 minutes.
Store any leftovers in an airtight container in the fridge.
Can I freeze Chicken Chili? Yes! Let the soup cool completely and place in plastic freezer bags and freeze. To reheat, thaw and reheat on the stovetop or in the microwave. You may need to add a little chicken broth if the chili is too thick.
Is Buffalo Chicken Chili gluten-free? Yes! All of the ingredients in the chili are gluten-free.
