Sausage Pinwheel Breakfast Casserole - made with a package of the new Sister Schubert's Sausage Pinwheels! This has quickly become a favorite at our house. Sausage pinwheels, crumbled sausage, and cheese, baked in creamy eggs. YUM! Can make ahead of time and refrigerate or freeze for later. Great for potlucks, hectic weekday mornings, lazy weekends, and holiday mornings.
Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
In a skillet, cook breakfast sausage until no longer pink. Drain fat.
Break apart sausage rolls; cut each roll into 3 or 4 pieces. Place chopped rolls in the prepared pan.
Sprinkle cooked sausage and shredded cheese over rolls.
Whisk together eggs, milk, dijon mustard, salt, and cayenne pepper. Pour egg mixture over rolls.
Bake, uncovered, for 45 to 55 minutes. Cover the casserole with foil during the last 10 minutes if starting to get too brown.

Look for the Sister Schubert's Sausage Pinwheels in the freezer section at the grocery store.
Feel free to add any vegetables you enjoy to the casserole. Onion, bell pepper, or fresh spinach would all be delicious.
I use Colby Jack cheese. You can use any cheese that you prefer. Parmesan cheese, yellow cheddar cheese, gouda, mozzarella, or gruyere would all be delicious.
Can substitute turkey sausage to reduce the calories in the dish.
Sometimes I add a little hot sauce to the egg mixture to give the casserole a kick.
Can Sausage Pinwheel Breakfast Casserole be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it overnight before baking.
Can Sister Schubert's Breakfast Casserole be frozen? Yes! Assemble the casserole and cover the pan with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.
