Swiss Chicken Casserole recipe – an easy dinner recipe that is perfect for a busy weeknight. Boneless chicken topped with swiss cheese, cream of chicken soup, chicken broth, and Texas Toast croutons – SO good! This only takes a few minutes to make and is on the table in under an hour. Can make ahead and freeze. This is sure to become a family favorite!
Heat oil in a skillet over medium-high heat. Add chicken to the skillet and cook for 2 minutes on each side.
Melt butter in casserole dish. Add the chicken to pan and season with salt and pepper. Layer 2 cheese slices on top of each breast.
In a medium bowl, add the soup and the chicken broth, season with salt and pepper and pour over the cheese. Sprinkle croutons on top and spray with cooking spray.
Bake for 45 minutes. Remove from the oven and serve.
Notes:
I use boneless skinless chicken breasts.
You can use any cut chicken that you enjoy. Adjust the cooking time to ensure an internal temperature of 165ºF.
I use Texas Toast croutons. You can use any flavor that youenjoy.
Can substitute a box of stuffing mix for croutons. Do not make the stuffing. Use the dry stuffing mix.
You can use any flavor of condensed cream of soup. Cream of chicken soup, cream of mushroom soup, or cream of celery soup all work fine.
I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
Can Swiss Chicken be made in advance? Yes! Assemble the casserole. Cover and refrigerate the casserole until ready to bake. You may need to add a few minutes to the cooking time if baking the chicken straight from the refrigerator.
Can Swiss Chicken be frozen? Yes! Assemble the casserole. Cover the pan with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.
Store leftovers in an airtight container in the refrigerator.
