French Onion Twice Baked Potatoes – the BEST potatoes EVER!! Super easy to make and loaded with tons of great flavor. Can make in advance and freeze for later. Baked potatoes, sour cream french onion dip, heavy cream, french fried onions, cheddar cheese, butter, garlic, salt, and pepper. Easy enough for a weeknight and fancy enough for a dinner party! Make this ASAP!
Preheat oven to 400ºF. Bake potatoes for 1 hour, or until tender. Reduce oven temperature to 375ºF.
When cool enough to handle, cut potatoes in half lengthwise. Scoop out the pulp, leaving a thin shell. Set skins aside.
In a large bowl, mash potato pulp. Stir in heavy cream, french onion dip, garlic powder, cheddar cheese, french fried onions, melted butter, salt, and pepper. Stuff mixture into potato skins.
Place potatoes on a baking sheet. Sprinkle with extra french fried onions, if desired.
Bake at 375ºF for 20 minutes, until heated through.
Garnish with dried parsley, chives, or green onions.
Notes:
I use russet potatoes for this recipe.
You can cook the potatoes in the oven, microwave or air fryer.
For the french onion dip, it is important to use a container for a refrigerated sour cream dip in this recipe. Look for Kraft, Barber’s, Dean’s, or Heluva Good Dip.
If you can’t find the sour cream dip, you can substitute sour cream and some onion soup mix.
Feel free to add some cooked chopped bacon to the potato mixture. You can never go wrong with bacon!
Can Twice Baked Potatoes be Made in Advance? Yes! You can make these twice baked potatoes ahead of time and refrigerate them overnight before baking. You may need to add a couple of extra minutes to the cooking time if the potatoes are cold.
Can Twice Baked Potatoes be Frozen? Yes! Assemble the potatoes and place them on a baking sheet. Place the baking sheet in the freezer and freeze. Transfer the frozen potatoes to a freezer ziplock bag.
To bake the potatoes after freezing, thaw completely and bake as directed below.
If you don’t have time to thaw the potatoes, I suggest starting the potatoes in the oven covered in aluminum foil for about 15 minutes and then removing the foil and baking as directed below.
Store leftovers in an airtight container in the refrigerator.
