Easy Chicken Casserole with Stuffing Mix

This recipe is from Plain Chicken reader, Cheryl Ener. This is her husband’s grandmother’s chicken casserole recipe. Cheryl emailed me this recipe back in June, and I am just now posting it (slacker – I know).

I don’t have a really good traditional chicken casserole recipe, so I was anxious to try this one out. I used rotisserie chicken and this came together in minutes and has tons of great flavor. It was the perfect weeknight meal! We both really enjoyed this casserole. We now know why it is called “Yum Yum Chicken” – YUM! Thank you so much for sharing this treasured family recipe, Cheryl!

How to Make Yum Yum Chicken Casserole

This casserole is effortless to make with only a few simple ingredients. Chop cooked chicken and spread it on the bottom of a 9×13-inch casserole dish. In a large bowl, stir together cream of chicken soup, cream of celery soup, and sour cream. Season with salt and black pepper, if desired. Spread the sauce over the chicken. Sprinkle a bag of stuffing mix over the soup mixture. Drizzle chicken broth and melted butter over the stuffing. Bake in a preheated oven until bubbly. Garnish casserole with parsley.

  • I use rotisserie chicken. You can use any cooked chicken you have on hand. Chicken breasts, chicken thighs, chicken tenderloins, or canned chicken.
  • What can I add to the chicken mixture?

    • green peas
  • You can use any flavor of cream of condensed soup. Cream of Chicken soup, cream of mushroom soup, or cream of celery soup.
  • I use stovetop stuffing mix. You can use any flavor you prefer.
  • Can Yum Yum Chicken be frozen? Yes! Assemble the casserole and cover the dish with plastic wrap and aluminum foil. Place in the freezer for up to 3 months.
    • When ready to eat, thaw and bake as directed.
  • Store leftovers in an airtight container in the refrigerator.

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Spread chicken in the bottom of the dish. In a separate bowl, mix together the cream of chicken soup, cream of celery soup and sour cream. Spread over the chicken.
  • Sprinkle the uncooked stuffing over the soup mixture, (note: if herb packet is not mixed with stuffing mixture, top stuffing with herb packet). Mix together the broth and the melted butter and pour evenly over all.
  • Bake, uncovered, for 30 minutes.

  2. I used to make a dish similar but without the sour cream. Several moves and some of my recipes are misplaced. We sometimes used pork chops as a substitute for the chicken and it is very good also.

  3. I made this dish and I am not much of a cook however my family loved it. It was easy to make and didn’t take allot of time

  4. My sister gave me the idea to add one more can of cream of chicken soup to the soup and sour cream mixture, then add an extra box of stuffing right on top of the chicken. So we do chicken – stuffing – soup mixture – stuffing, then top with the broth and butter mixture. It’s very moist and delicious!

  7. i used chicken tenders, boiled for a bit, shredded. i had to sub cream mushroom for the cream chicken though. i think half the amount sour cream i wouldve liked better, and I did add baby swiss slices over chicken before the soup mixture. added the broth to the box of stuffing mix first, but still a little crunchy on top, which was fine since the rest was really gooey lol, in a good way. only change would be to use less sour cream, and do use cream of chicken like it called for. hubby loved it, had green beans with it. good easy dinner fix for me. tysm

  9. I think I will try this tonight. The basic recipe looks amazing! I liked all the suggestions and the idea of adding vegetables to round out the dish. I also like the idea of trying poultry seasoning and salt and pepper as we like a bit of seasoning to our food. Thanks so much for this easy light recipe!

  10. This so good. I took some other tips from the comments and added Swiss cheese to 1/2 of it (cause I was like Swiss cheese with chicken and dressing????????YUCK. IT IS THE BOMB. So good. I also sauteed some celery and onions, added my soup to it, then some poultry seasoning and kinda heated it before I poured it over the chicken. I also after reading comments, soaked my dressing in the butter and chicken broth to soften it up, then baked. (Also, I was so hungry, I forgot to add the sour cream, but didn't miss it. It was still wonderful. Especially the cheese side
